Healthier Edible Cookie Dough (Vegan, Gluten Free, Oil Free, Refined Sugar Free):

Ingredients

  • 3/4 cup certified gluten free old fashioned oats ground into flour in a blender
  • 1/4 teaspoon fine sea salt
  • 1/2 cup coconut sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup canned pumpkin puree
  • 1/4 cup unsalted peanut butter
  • 1 Tablespoon gluten free almond milk
  • 1/4 cup vegan chocolate chips

Instructions

  1. In a large mixing bowl, add the oat flour, fine sea salt, and coconut sugar. Stir to combine.
  2. Add in the pure vanilla extract, pumpkin puree, and peanut butter. Stir to combine.
  3. If your mixture is a little dry, add 1 Tablespoon almond milk. Stir to combine.
  4. Add in the vegan chocolate chips, and fold in to combine.
  5. Roll the dough into twelve 1” balls.
  6. Refrigerate for 30 minutes for best flavor.
