Is it just me, or is the best part about cookies the cookie dough? Ok, cookies fresh out of the oven are pretty heavenly, too. But there’s just something about cookie dough that’s so insanely delicious. I hope you enjoy my healthier take on vegan cookie dough!
Vegan chocolate chips are one place where I feel like it’s important to splurge on high quality ingredients. I’ve made this recipe with both highly quality vegan chocolate chips, and with mediocre vegan chocolate chips. The taste difference is absolutely huge! Truly, it surprised me what a difference it makes. I prefer the Enjoy Life Dark Chocolate Morsels or Mini Chips.

Healthier Edible Cookie Dough (Vegan, Gluten Free, Oil Free, Refined Sugar Free):
Ingredients
- 3/4 cup certified gluten free old fashioned oats ground into flour in a blender
- 1/4 teaspoon fine sea salt
- 1/2 cup coconut sugar
- 1/2 teaspoon pure vanilla extract
- 1/4 cup canned pumpkin puree
- 1/4 cup unsalted peanut butter
- 1 Tablespoon gluten free almond milk
- 1/4 cup vegan chocolate chips
Instructions

In a large mixing bowl, add the oat flour, fine sea salt, and coconut sugar. Stir to combine.

Add in the pure vanilla extract, pumpkin puree, and peanut butter. Stir to combine.

If your mixture is a little dry, add 1 Tablespoon almond milk. Stir to combine.

Add in the vegan chocolate chips, and fold in to combine.

Roll the dough into twelve 1” balls.

Refrigerate for 30 minutes for best flavor.
